Differences in Turkey
Type

This is the usual Broad Breasted White or Bronze turkey you find at the
grocery store, notice the large breast meat. They can reach 80 pounds but
the usual is 13 to 27.
Heritage Turkeys usually weight 6 to 12 pounds and are very different looking
than broad breasted turkeys, notice the very narrow breast meat and large
fatty pad on the front of the breasts.
Beware of anyone selling something they call "heritage turkey"
that looks like the broad breasted above, it just isn't.
Beware of getting fooled by the breed name of the turkey.
In Broad Breasted types there Whites, Bronzes, calico and sweetgrass. All
this tells you is the color of the birds feathers, They are still all broad
breasted birds and all will have the shape of the bird above.
In True Heritage Breeds
there are
White, Bronze, bourbon red, blue slate, black, royal palms, spanish, eastern
wild and a few more, while these are all heritage breeds, again it also
tells you they are different colored birds, BUT the major point, they will
all have the same shape as the heritage bird below.
Both broad breasted
birds and heritage birds can be raised organically, or naturally or pasture
and grass fed, these terms do not state whether or not they are broad breasted
or heritage.
