Hanging weight is the weight of the meat after the hide, head and extra parts have been removed.
Hanging weight will range anywhere from 120 to 200 pounds, we just won't know until they go.

Custom cut to your specifications:
One of the benefits of having your own pork being custom raised for you is that you can tell the butcher exactly how you would like your steaks cut, how thick you want your chops and all sorts of instructions.
Your hog will go to the butcher sometime in October., we use T. L Kellers Meats in Litchfield, Ohio on rt 83 just north of rt 18.
When your hog arrives at the butcher on a Tuesday ( I will email you in advance to let you know ) you will need to call him and discuss how you would like your meat cut and packaged, he is very nice and will walk you through the process, if you are unfamiliar with how the pork should be cut he has a generic method which is wonderful But if you have a special cut in mind please do let him know.
When you pick up your meat from the butcher you will not have to pay him, I will pay him from the money you give to me. The butcher will have the hanging weights ready for me at this time and I will add up the total for your pork minus the deposit you have provided at the beginning of the year.

What makes our pork different from store bought pork is the fact that our pigs get to live a more natural life and happier life than CAFO pigs. Ours live out in the fresh air and sunshine, get to root around in the soil and plow through the grass and clover, and love to dig under trees and logs hunting for bugs, nuts and truffles and in the fall, apples and other fallen fruit. They get to dig their own mud wallows for nap time or run as fast as they can in games of chase if they so desire. As is our practice, we will only raise as many pigs as we can comfortably care for, 8 or less per year is the usual.
We limit the numbers of pigs so we can attend to their individual needs properly. We also want to be careful not to over burden our land with their naturally destructive pig activity and waste.
Ours is certainly not the most efficient way of raising hogs but it is less stressful and more humane for the animals which inturn makes for a tastier and healthier cut of meat.

Pigs eating grass, the more grass and less grain they eat the healthier the meat will be for us.
